Some recipient emails may not display the Sender field unless the
recipient chooses to display full header information (e.g., Yahoo!).
Others will display the actual email address right away with that
Sender address on behalf of From address phrase.
There is no alternative to achieve what you want with Gmail.
Apparently they're not into Information Hiding.
