I get upgrades about once a month in the form of new labs, themes, or features.

Uh.... Gmail has made a LOT of changes since it opened up 4 years ago. (or 5 years ago?)

Being a web application, GMail automatically updates.  Every time you see a new feature, GMail has been updated.

The new user interface (with colorful backgrounds) is an example of one of the upgrades. You receive no notification on that.

Honestly, don't obsess yourself over your email account. Please, it can be very unhealthy. I still use the old Gmail interface (http://mail.google.com/mail/?ui=1) for the interest of optimization that the new user interface (ui=2) lacks.

What optimization(s) are you referring to?  My experience has been that GMail 2.0 is vastly optimized compared to the original.  With none of the "spiffy" extras like labs or themes, I found GMail 2.0 to be incredibly faster than 1.0 ever was.  Heck, even with the labs features on and using a theme, I find this faster than the old one.

I, for one, am NOT waiting in anticipation for Gmail to ever go out of
Beta. They might start charging for it then.

Maybe not, but you never know. I've seen some other nifty tools
change from Beta (free) to full product status (no longer free). I
don't mind staying a Beta-tester forever. I like finding problems and
giving them feedback.
