I have emails coming in the same HTML format that I would like to
parse the contents into individual cells.

For instance, I have a message that says:

Name: Joe Smith
Address: 1234 Main Street
Occupation: Plumber

I want that content to auto parse into a spreadsheet with headers as
Name, Address, and Occupation. I want this spreadsheet to autofill as
new gmail message come in.

Is there a way to do this?

THANKS!

I'm looking for the same. Did you have any luck moving forward with this project?

See this page,  http://simpleappssolutions.com/

The Email Archiver or Print All scripts may do what you need.
