Where do I find the highlighter tool in Gmail?

I do not see the highlighter tool anywhere on the toolbar or in the
gmail text icons.
There are tools for font style, size, text center, left, right, text
color and highlighter color yet there is no highlighter tool icon.
I'm fairly new to gmail so I tried using the help menu to get an
answer. I see references to the highlighter tool in Excel and Adobe but
nothing for Gmail.
I understand that Gmail is in beta stage but there are an awful lot of
quirks in what would seem to be pretty basic stuff.
Any suggestions?

Highlighting is right between the text color and link buttons. (7th button from the left.)

Why can't you just hold down your mouse button and go across what you
Want to highlight?  You don't need a "button" to do that.

I think they want to hightlight it so that their friend (or whoever they're sending the email to) can see the highlight as well. Doing it that way doesn't make any permanent change.

in the rich text format and not plain text format

Excellent point. Click the "Rich text>>" link (if there is one) directly above the composition box. If you already have the toolbar with various buttons, you should be good.
