I see many queries about Gmail sorting by most recent date. Is there a reason Gmail does not implement this automatically ... and place other sorting under advanced?

As far as I know, Gmail does and always has sorted by date, in descending order (most recent at top). So I am not sure why you suggest that it does not do this automatically.
I believe the date criterion is the received date, not the sent date, but I could be wrong.
Of course if you have conversation mode enabled, they will be grouped within conversations, with the date order reversed (most recent at bottom); and the most recently received message in the conversation becomes the one that determines that conversation's position in the overall date sort in the list view. If you wish to have ALL messages strictly in date order, you would want to disable conversation view in your Settings.
In spite of many suggestions over years by users to give us more flexibility in choosing different sort criteria, Google has never done it. Is there a reason? Because they can.
