filter action: "remove label" or filter on X-Gmail-Fetch-Info

I use GMail to consolidate several POP accounts. My IMAP client and
my Android phone have special "you have mail" actions based on Inbox
and I want those reserved for my private e-mail account. The other
accounts are for public transactions, including mailing lists. On
GMail's "Edit mail account" screen (Accounts and Import/Check mail
using POP3:/edit info), I select "Archive incoming messages" to direct
their traffic away from my Inbox, and "Label incoming messages" to
keep it from going unnoticed into "All mail".

From there, I filter the listserve traffic. I use the "list:" header
(Filters/Has the words) and my various list names to label these
messages, which retain their "incoming" label. To keep non-list
messages from getting lost among the "incoming" labels, I use a script
on my IMAP client to remove the "incoming" label from the list
messages.

Because I have to duplicate my filters on my IMAP client, and my
"incoming" box fills up with list traffic if the client isn't running,
I'd like to achieve this same search action on GMail. If my list
filter could replace my "incoming" label instead of adding to it, I
could obviate the IMAP client.

Or I could do it with GMail filters if I could keep messages from
leaking into my Inbox or slipping unlabeled into "All mail". If I
remove "Archive incoming messages" from the account, a blind copy, non-
list message will wind up in my Inbox. If I archive but don't label,
that message goes unlabled into "All mail" where I'm unlikely to see
it. If I could filter on "X-Gmail-Fetch-Info", I could differentiate
my Inbox account from the others and apply labels appropriately.
