Just made our 1st coconut ice cream for summer...oh my!

It was so GOOD! So creamy, so simple! The ingredients were healthy
and simplistic (coconut milk, honey, stevia....),
It turned out great!
The equipment I used? A regular blender (nothing fancy) to mix it all
and a cheap Rival ice cream maker (you know, the kind that you find
for $15-$20 on sale here or there?)
It turned out just perfect!

It is so exciting to have such a delicous ice cream that we can all
eat that won't make us sick!
I used the recipe for the basic vanilla (minus the vanilla extract, so
it was a true coconut ice cream!) from Rachel Mastez's book, Ice
Dream.
I highly recommend this book if you want to make some ice cream.
Besides many great recipes, she has a wealth of good nutritional
information on coffees, sugars, ingredients, cooking instruction,
gluten sprue and more. She is a wonderful writer and I really enjoy
reading her book as much as using the recipes!

is a ice cream maker necessary?  I actually have one, but I am not sure it is working right.?
BTW, looking forward to the class Thurs.  I already make my own laundry soap, but am definitely interested in other cleaners.

I tried to make ice cream last summer use soy based products and I nearly burnt my motor up.  I don't think there was enough fat and it froze to quickly.  I am assuming that the coconut milk has more fat and that you didn't have this problem.  Just wondering.

Cindy, you do need an ice cream maker to make the ice cream.  BUT if you want to make a shake, you can just do it all with your blender and freezer! What I have done, in the past, is make the ice cream base, freeze it in ice cube trays, and then blend it with rice milk for a quick serve shake!
