Well, I am shocked...first Starbuck brings us a gluten free/ dairy
free almond flour cake and now Betty Crocker offers up a gluten free/
dairy free line of mixes with no added BHT or other ucky ingredients
that I have seen!

I just made the chocolate devils food into muffins. I made 17 small
muffins. They turned out very good. Good taste and texture. I used
Earth Balance for the butter replacement, although coconut oil would
taste great, here. I used egg whites, but I would be happy with the
flax egg replacer if needed (which would be 1 tablespoon milled flax
mixed with 3 tablespoons hot water per egg).

The mix was $4.28 at our local store, which is $1-$3 cheaper than the
competitor mixes that I would choose from. The brownie mix is still a
bit more expensive than the Gluten Free Pantry variety.

Ingredients were simple: rice, potato, tapioca, sugar, guar gum

I give this a thumbs up! See review page for more reviews

While this is great and the girls LOVED it, I still think Pamela's
chocolate cake mix is my all time favorite!

Wow, Market Basket, how could I have missed that, well maybe I did because usually that area is off limits to us anyways.  I am a nurse, I work at Mass General in Boston, at work right now, I am going to stop by on my way home in the morning.  Thank you so much for the info, would like to make something for the 4th!! Thanks for taking the time Donna! Sandy Federico

Isn't it great when we can find a few convenience items to make those special occasions more festive?!  I brought those cupcakes to our fourth of July celebration and shared them with the four girls who have allergies.  They were a big hit!

Hi Everyone… I live in Northeast PA in the Scranton/Wilkes-Barre area, and I have not found the mixes as of yet… I tried Walmart without any luck…  I still have to look in Wegman’s.  Did anyone in my area find them yet?  Also… to the people who have already bought the mixes and tried them… how are the results?  Are they gritty or sandy?  Thanks for your input. Chris

Hi Chris, The Devil's Food cake mix was great no grit or sand! I have not tried anything else yet. Sandy you are very welcome. You are not by any chance originally from Tewksbury Ma? I am but moved to Londonderry NH about 18 years ago. Your last name sounds so familiar. Donna

Hi everyone,
What kind of methods are you using to put weight on your kids who are dairy, egg,  and almond allergic?  My son seems to have the smallest stomach ever...he eats small amounts and somewhat often, during the day.

Any tips or tricks would be appreciated!

Thanks!
Nancy

Ah, the ever popular question to those of us whose kids are on these
diets! It's not easy, and once thought of hiring a nutrionist but was
too costly, but his advice was just to make sure they eat healthy, and
the rest would 'take care of itself'. This from a mom whose kid has a
donut or toast every morning, (sometimes eggs/pancakes....she hates
cereal and milk).....not very healthy, but it's quick and easy on a
rushed school-day morning! I'm curious to see everyone else's responses.

to Gluten and Dairy Free Cooking - Low Allergen
Hello Nancy,
For healthy fat sources for children with dairy, egg, and almond
allergies, you can look to avocado, quality oils (flax oil, extra
virgin olive oil, walnut oil etc), coconut milk, pasture raised beef,
chicken stock - homemade and more along this line. You will find
plenty of fat options in those whole foods and they are easy to work
into most meals.
So, for example, if you were making gluten free pancakes or hot
cereal, you could add 1/2 Thai Kitchen coconut milk to the mix of
liquids to add satiety and fat to the otherwise low fat meal.
The homemade chicken stock can be frozen in small containers and used
for a variety of foods, such as cooking rice (instead of water -
alone), heating veggies, etc.
Coconut yogurt is another great source of fat and additional
nutrients. So Delicious, Turtle Mountain Company, makes a great
coconut yogurt.
Avocado can be mashed into a pudding with date sugar or agave nectar
and cocoa or carob powder. It can also be used as a base for dip and
gucamole, or served plain.
Eating a variety of healthy fats and proteins, complex carbohydrates,
fruits, and vegetables will lend itself to a truly balanced and
healthy eating approach.
If you feel stumped, try www.thegardenofeatingdiet.com and take a look
at their cookbook. It is free of dairy, almond, and egg in most
recipes (although eggs are used in a few recipes and there is an egg
section, you can just ignore that portion and use all the other great
information!)

You are right nancy on when you said you give your kid donuts or toast even pancakes and eggs.
There is no right or wrong way. I have a son who is allergic to wheat, soy and milk protiens. I know how hard it can be but I spent alot of time with a nutrionist and she said give him everything he can have. I was concerned with the fat and unhealthy effects it would have on him later and she said the weight bulking would only be temporary and would not have long term effects. She told me to give him french fries, hot dogs (safe ones), hambergers, eggs and what ever I could to get him bulked up. My son had lost a lot of weight because he was misdiagnosed and very sick. We use rice milk as an alternative to milk. The lack of weight gain also has its long term effects. My son is getting to a healthier weight now so I am for temporarily giving him the "bad stuff". However he is also learning to eat healthly in the mix of things for the future.

We use a powder called Duacal (CVS or Wegmans can order) which we place into foods and mainly drinks.  We also use a protein powder (natural food store) and mix that into hamburger, meat loaf etc. Our son has a very restricted diet and is thin but has now been gaining since we started the above and changed some food items around.  He likes to eat bus is very fussy.

Hope this helps...

Oh yes, the avocado works great as you can mix it in with salsa and dip the
chips in it. We also use a lot of oils such as sunflower, olive etc

The Duacal powder works very well as it blends nicely in just about
anything.

Hi Donna,
Sorry to take so long getting back to you, we were away, no I'm not from Tewksbury, we moved to Stoneham when I was in jr. high, and have since stayed here. I have cousins, Federico's that live in Londonderry as well!  And I wanted to tell you, when we were away, had some great finds, maybe you already know, but in case you don't , the Flatbread Company...we were in Maine, in the rain, looking for something to do, went to Portsmouth NH, and had pizza at the Flatbread Co  on Congress St, 5 people in our gruop are gluten free, everyone loved the pizza!! They make the gluten free ones personal size, can't get a large , but everyone was satisfied, there are quite  a few of these around just found out, and in Mass they are in Amesbury and Bedford.,also, same street, a place called "Anello's Cafe", totally gluten free deli/bake shop, we spoke w/ owner, she and her daughter are gluten senstive, she gave me a website that I don't have with me at the moment, but it is her store.  We tried many of her products and bought pastries to bring home, the owner, Traci, very nice, very helpful.  We had never been to Portsmouth before, beautiful area.  I will get back to you with the website, Sandy
