Can you recommend any good GFCFSF chocolate chip cookie recipe or mix?

I've tried a few but they weren't very good.

There are gluten free M&M's at the health food store.  No I have not found a recipe for chocolate chip cookies.

I just use the recipe on the bag but sub cashew butter for butter, use soy free choc chips (soyfreesales.com) If I have truly gluten free eggs I use those, if not egg replacer but oh eggs make a difference! I use part rice flour and part coconut OR rice flour w/ tapioca/potato starch. pinch xanthum gum….sometimes I add a little rice milk so its not too thick. I never really measure which does not help you….i have also found that ener-g foods baking powder really helps things to rise and be fluffy…..

Betty Crocker now makes a mix that my family likes, but their favorite is
Pamela's brand chocolate chip cookie mix.

I haven't made chocolate chip cookies yet but I do have a few recipes I
pulled off line. I bought a box mix once and they were soso, too sugary
not enough substance. I like them more rich.

Dear Nancy:

Elaine Gottschall (Breaking the Vicious Cycle) has a great recipe for what she calls Monster Cookies.  You can just delete the raisins and add dairy free chocolate chips. Also, substitute the butter for either ghee or coconut oil.  Everyone loves these cookies - even those who are not gluten free.

Monster Cookies:

5 cups nut flour (I grind almonds)
1 cup raisins
1 cup walnut pieces
1 cup flaked unsweetened coconut
1/2 cup melted butter
1 cup honey
2 beaten eggs
1 teaspoon baking soda
1/8 teaspoon salt

Mix all ingredients.  Drop by large tablespoonfuls onto greased cookie sheet.  Press flat with a buttered fork.  Bake at 325 for 15 - 20 minutes.

Don't worry about someone saying that they don't like coconut.  These cookies are so good that no one hardly notices the coconut.  And, coconut is so immensely good for you, that it is a good idea to sneak it in whenever possible.  All of my kids love it and eat it in hunks.

Hope this helps.  Laura

I haven't tried it yet, but I have a recipe in a new book, 1,000 gluten-free
recipes by Carol Fenster. If a recipe calls for milk she usually suggests
rice milk or alternate milk for it. She uses a basic mix of flours called
Carol's Sorghum Blend: 1 1/2 c. sorghum flour (35%), 1 1/2 c. potato
starch/cornstarch (35%) and 1 cup tapioca flour. Whisk together and store
tightly covered in a dark, dry place. Makes 4 cups.

Chocolate Chip (drop) Cookies

1/2 stick (1/4 c.) unsalted butter or buttery spread such as Earth Balance
at room temperature
3/4 c. granulated sugar
1/2 c. packed brown sugar
1 large egg, at room temperature (or replacement) (I don't do egg yolks)
2 tsp pure vanilla extract
2 c. Carol's Sorghum blend
1 tsp xanthan gum
1/2 tsp. salt
1/4 tsp. baking soda
3/4 c. gluten-free chocolate chips, such as Tropical Source
1/4 c. finely chopped pecans or walnuts (optional)

Preheat oven to 375 degrees. Line 2 15x10 baking sheets (not non-stick)
with parchment paper.

Mix butter and sugars then egg and vanilla. In separate bowl mix sorghum
blend, xanthan gum, salt and b. soda, then gradually beat into egg mixture
on low speed until just blended. Stir in choc chips and nuts. Knead dough
with your hands a few times to make sure chips and nuts are mixed in.

Using a wet tablespoon or scoop drop 1 1/2-inch balls of dough at least 2
inches apart on baking sheets, 12 per sheet. Place one sheet on the
lower-middle rack and another on the upper-middle rack of the oven. Bake 12
to 15 min, rotating racks half-way through baking or until cookies start to
brown around the edges. Cool the cookies 2 to 3 minutes on the baking sheet
then transfer them to a wire rack to cool completely. Store tightly covered
for up to 2 days or in the freezer for up to 1 month.

I've tried about 8 recipes in this book...mostly entrees and haven't been
disappointed in any of them yet. I work full time and find it hard to find
time to try them out!

My favorite dessert cookbook is called Sweet Alternative by Bundy.  All recipes are dairy, soy, and gluten free.  They are also quite gourmet!  (and there is a chocolate chip cookie recipe that is wonderful!)

To get the chips you want, look here:

I am able to easily find gluten, dairy free organic chocolate at my local hfs.  But this chocolate is also soy free!

hth,

Yes, the coconut flour is great and I use it a lot.  However, it does absorb liquid differently than most flours, so you would have to adjust the liquid, which sometimes does not make a very good baked product.  You can find fabulous coconut flour recipes on line and they already have the appropriate amount of liquid added, so there is no guessing.  I order my coconut flour from Tropical Traditions.  Their product is not only good, but they support small farmers for a fair price.   Their website also has recipes.  Keep us all posted about your cookie successes!  Laura

Read the individual ingredients--some products contain gluten, but there are some that are soy and gluten free and vegan (which is a hard-to-come-by combination). Some are free of nuts also. Sondy
