Here I posted a cornbread muffin recipe. For those who can do corn,
we buy non GMO organic corn meal. The muffin pictured is made with
flax seed egg replacer instead of egg, but it works well with egg,
too.
In the summer, I cook these muffins on the grill. If you have a large
grill with a temperature gauge, you may like to save your house the
heat and try the same method. I have four burners. I turn two off,
leave the other two on high, which heats my grill to 400 degrees F. I
cook the muffins in a metal tin on the side without flames (not
directly over flames...that is important! They would burn,
otherwise).
This works great if you have a large gas grill!
We have had a fortuntate summer in that the weather has been so nice,
we have not needed the air conditioning at all (well one week so far!)
