Gluten Free Asparagus Salad

This is my version of asparagus salad. It's very light, tasty, a great
pair with fish. I prepare it with seasonal organic asparagus, shaved
really thin, and lightly tossing it with grated parm and a simple
lemon, oil dressing. I know most people like to cook there asparagus
but this is something different and delicious you can do with
asparagus.

Ingredients:
2 Lbs. Asparagus (large)
1 Cup Parmesan Cheese (grated)
3 Tablespoons Lemon Juice
1/4 Cup Olive Oil
Kosher Salt
Black Pepper

Directions:
1. In a bowl combine Parmesan, lemon juice, olive oil, salt and
pepper.
2. Shave asparagus into the bowl and toss.
