Wet Ingredients:
3 Tablespoons Wildflower Honey
1/2 Teaspoon Vanilla Extract
2 Tablespoons Coconut Oil
3/4 Cup Water (warm)
2 Egg Whites (beaten til stiff peaks)

Dry Ingredients:
1 1/3 Cup All Purpose Gluten Free Flour (ie Bob's Red Mill)
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Kosher Salt

1. In a large bowl mix together the dry ingedients.

2. In a seperate bowl whisk together the wet ingredients leaving out
the egg whites.

3. In a clean metal or copper bowl whisk egg whites to stiff peaks.

4. Fold together the pancake batter and egg whites.

5. Heat a non stick pan to med/low heat. Add a teaspoon of coconut oil
to the pan, then a laddle of the pancake batter.

6. Flip pancake when you notice many bubbles on top of pancake. About
20 - 30 secouds.

7. Place pacake on a plate, top with sweet butter, and maple syrup.
Perfect pancakes everytime.
