I've never met a single person who can resist a warm, buttery, flaky
biscuit hot out of the oven. My version is completely gluten free and
still delicious. I promise you will not be able to tell if they where
regular biscuits or not! I love to make them with breakfast in the
morning and have some leftover for during the day. Make a sandwich
with it, have biscuits and gravy with em', the possibilities are
endless.

Gluten Free Biscuit Recipe
Wet Ingredients:
3/4 Cup Rice Milk
5 Tablespoons Butter (cold)
1 Teaspoon Vinegar

Dry Ingredients:
1 1/3 Cups Cornstarch
1 Tablespoon Baking Powder
1/2 Teaspoon Baking Soda
2 Teaspoons Sugar
1/2 Teaspoon Kosher Salt
1 1/4 Teaspoons Xanthan Gum

Baking Directions:
1. Mix dry ingredients in a large bowl.
2. Cut butter into the dry ingredients.
3. Add milk and vinegar and mix well.
Note: Do not over mix.
4. Ounce the dough comes together, roll it out and cut out biscuits to
desired shape and size. Try to keep them even in size.
Note: If biscuit dough is sticky, add just enough cornstarch to bring
it together.
5. Place Biscuits in a medium sized greased backing pan. Keep biscuits
close to eachother and side of baking pan, it will help the biscuits
rise.
6. Brush the tops with egg wash to help brown.
7. Oven must be set on 375 degrees. Bake approx 20 minutes. Let cool
and enjoy.
