I really can't remember where I read it (I didn't bookmarked the page). This would be the way you recommend to accomplish what I need?

Gitolite doesn't care as long as it's update hook is left intact.

Look in the gitolite master table of contents for a section about
"moving existing repos into gitolite" for more.
