Path to difftool:

C:/Program Files/Microsoft VS Code/bin/code.cmd

Difftool command:

"C:/Program Files/Microsoft VS Code/bin/code.cmd" --diff --wait "$LOCAL" "$REMOTE"

The new upcoming version (v2.51) adds support for VSCode as a diff/merge tool out of the box (https://github.com/gitextensions/gitextensions/pull/3919)
