Dear all;
Just few tips (not becuase I have done tourist-catching before, but just because I feel so)

If I were you;  I would go to more quiet places. It would be much easier to talk to tourists in those less crowded places I believe.
1) Piyer Loti, Eyüp Sultan Camii are, for example, not that crowded. Yes, the number of tourists there is low, but since they are away from major attraction points, they can be more helpful to you.
2) In Eminönü region, Rüstem Paşa Camii avlusu is also a veery quiet place although it is in a very central place in Eminönü. There are many tourists visiting the place due to its magnificient  tiles (çini); yet the avlu is very empty; so I am sure tourists would want to help you there in that quiet place.
3) Süleymaniye is another quiet place, not that crowded with tourists, but there are always tourists there. So check the kurufasulyeci places, there are always tourists sitting there, or go to the camii or the tombs at the back (Hürrem sultan türbesi vs), again many tourists, but much less crowded compared to Sultanahmet- ayasoyfa region. It is also very cheap in kurufasulyecis, so you can have a very nice lunch there too. You can also check the newly restored camii.

These are the places that comes to my mind.

Good luck
