I have been using the Soave Classico which now I have bottled for a
"spumante" type wine. Opened the first bottle today, and a nice "puff"
came out and it is sweet (level 9.5 when bottled). I had this in the
garage to slow down the fermentation and have now moved to the
basement to increase the temperature and restart. I want to have it
arrive at a lower sugar level and then bottle for a nice dry
sparkling.
