yes, absolutely it is possible. Please see http://code.google.com/p/gh615/wiki/exportTemplate
for creating your own export templates.
Alternatively, you could just export to GPX and then convert to
another format with gpsbabel (http://www.gpsbabel.org/) or
http://www.gpsvisualizer.com/

How I can turn a gpx with heart rate in *.hst?
The program gpsbabel does not have this option .
