Seq configuration, losing changes.

Right now, we can change the location of the data for seq through the 

This way I move all logging to a different drive/location - perfect.

I have to uninstall the service.

When I do this I lose _some_ settings.  Even if I copy the data files, I seem to lose my nuget packages that I installed.

Ultimately I would like to have all seq configuration in one place (that I backup) and the logs going somewhere else (that I dont backup).

To reproduce...install seq.

add 3 nuget packages.

stop seq

uninstalll

reinstall with a new data path.

start seq
