Is there any way to unroot a device?

It seems even if i remove /usr/[x]/bin/su and disable the SuperUser app, i'm still root, e.g., i get a root shell on adb shell. Uninstalling SuperUser app doesn't work, presumably because it is baked into the ROM?

thanks!
