Ive created a mask and now need to amend small areas of it so was expecting to paint white and/or black on it to adjust accordingly. But all that happens is I get is the mask being erased no matter what colour I use.

Yes, i deleted my question because that's not the issue. A selection would prevent any kind of painting and we are still seeing the strokes even if they act weird. Seems a pontual glitch to me. If you close the app, reopen the image again and try to paint on the mask does it work correctly?

Haha thanks for spotting that too MEB I totally thought I was going mad. Sumpin' definitely wonky it's broken again after working after a restart. All I did was change the opacity in the slider Carl pointed out and now the paint brush no matter the colour is erasing the mask again.

The problem still persists on Affinity Photo 1.9.3 and Big Sur 11.4 Mac OS when using an image stack with two images and a corresponding mask layer assigned to each of them. It does not paint white on top of black in the mask layer. The color and opacity settings seem totally fine. Restart does not help.

If you mean an official stack (File > New Stack) then I think that masking is handled somewhat differently, with some special rules for how masking works. I don't think that would cause what you just described, but I think it might be better for you to start your own topic, and to provide screenshots showing the Layers panel, and possibly a sample .afphoto document.
