If you haven't seen it already, I encourage you to have a look at Marcin's presentation on how to test Gaelyk applications:

The blog post gives link to the presentation Marcin's given at the Greach conference and the Groovy/Grails eXchange conference. There's even a link to the recording of the latter one, and also links to the code of the sample app he used for testing.
