Most issues I've come across with foxit reader and other applications is that sometimes you'll need to tweak the security settings down so PDFs can be viewed directly in the browser. Firefox has had an on/off relationship with the Foxit Reader plugin as fas as stability goes in my experience!
There was a time when other PDF readers would not have even been considered as Adobe Reader just worked. It's ubiquitousness is it's weakness these days but Adobe don't seem up to the challenge of securing Adobe Reader and making a product that just works at the same time.

Talos has identified four use-after-free vulnerabilities in Foxit Reader. The reader includes Javascript support to enable dynamic documents and multimedia content, which can be viewed interactively. A specially crafted PDF document can trigger the reuse of previously freed memory, which can lead to arbitrary code execution. An attacker needs to trick a user into opening a malicious file to trigger these vulnerabilities.
Users are encouraged to update these affected products as soon as possible: Foxit Reader 12.0.1.12430. Talos tested and confirmed these versions of the reader could be exploited by these vulnerabilities.

When you had the Adobe Reader installed, it was the default PDF reader and that's why all the PDF files have that icon. You can do that same by setting the Foxit Reader as default PDF reader. Follow the instruction below.
Select any PDF file and press Command + i. You will get and Info page. Go to "Open With" selection and select "Foxit Reader" from Applications. You will find an option "Change all". Select that and it will set the app as default PDF reader and will change the icons.
I have not tested this (I don't have Foxit), but I was curious what Chat GPT-4 would say when asked about possible solutions to best automate reader. I asked it specifically about using a COM API (Foxit does have an API). It barfed up the following tester which may or may not work. Either way, the API reference docs can be found here. I would think the API would be more reliable then sending commands to the GUI.
But after upgrading to the currently latest release, v10.01.1, the results look quite promising. The remaining constraint is, that quite a lot of lines, that are saved as two lines by foxit (separate table rows in the original PDF file) are now saved as one line by gs. But that can be handled by the data processing done later on.
