If it started in the cellar, then any electrical fault or gas leak, or even
a chemical spill, like cleaning fluids, could cause a fire to spread
quickly. It is also an old building with a lot of timber in the main
structure, so the fire would get hold without much problem.
And the bar was closing, or was already closed to customers, and it was just
the staff left inside, as far as I was lead to believe.

do you think it was an accident or do you think it was an insurance job?
The best place to commit a crime is to do it front of lots of witnesses and
make them think you are stupid?
If it is, then the person who committed the arson attack could be charged
with murder. Or at least man slaughter. So the clever person might feel a
bit stupid if caught. If it is a tragic accident, then no one is to blame.
Fire investigation is not a difficult task any more, and forensic science
can now find out exactly how, where, when and why a fire started. If it was
deliberate, then it will be found.
I hope it was an accident.
