Whether you're a cocktail lover, a hospitality professional, or someone looking to explore a new hobby, this course will equip you as a confident and skilled bartender, ready to create memorable experiences through the art of cocktail making.

What is Mixology? Mixology is a term for mixing drinks or bartending, and a mixologist is a title for a bartender or bar chef. Thus, mixology is about the art and craft of mixing drinks and the mixologist is the professional who practises it.

This programme is designed to provide a sound introduction to mixology and it is suitable for those who are interested to broaden their cocktail knowledge and the craft of cocktail. Students will be introduced to the main styles and categories of cocktails, spirits, liqueurs and their defining characteristics, as well as the classic and modern cocktail recipes. Through demonstrations and self-practice, students can choose appropriate bar tools, garnishes, and ingredients to craft their own cocktails in classes and eventually enhance their cocktail crafting techniques. A bar visit in the hotel will be arranged to get students familiar with the real operating environment of a bar. Thus, this programme prepares students to develop their interests to be mixologists for both social and work purposes.

1. List the principal styles and categories of cocktails and describe their defining characteristics and flavour profiles;
2. Describe the historical background and development of cocktails, cocktail presentation and bar categories;
3. Distinguish the essential ingredients of cocktail making, including spirits, liqueurs and aromatized wines; and describe their key characteristics;
4. Identify the common bar equipment and tools used in crafting cocktails and servicing of drinks; and
5. Explain and demonstrate how the key types of cocktails are made, using basic techniques, essential ingredients, and garnishes.

1. Students can taste many types of cocktail during the course of their studies, and they are systematically arranged by classroom session.
2. A unique site visit to a Cocktail Bar, allowing students to have direct and first-hand experience inside the Bar, and have the opportunity to blend and craft their own cocktail!
3. Our mixology course is taught by qualified professional who is knowledgeable in cocktail around the world.
4. Our mixology course will be delivered by a single teacher throughout the entire course to ensure consistency in content and teaching style.
5. Small class-size in this mixology program brings about better teaching and learning, and enhances teacher-student interaction.

(1) Lectures and In-class practises (27 hours): Students will learn about the main styles and categories of cocktails, spirits, liqueurs and their defining characteristics, as well as classic and contemporary cocktail recipes.

(2) Cocktail bar visit (3 hours): A bar visit at hotel will be arranged to get students familiar with the real operating environment of a bar. Thus, the programme develops students' interests in becoming mixologists or bartenders for both social and work purposes.

Upon successful completion of the programme, students will be awarded a "Certificate for Module (Cocktail Appreciation and the Craft of Mixology)" within the HKU system via HKU SPACE. For those students who cannot pass the assessments but have completed at least 70% of attendance, a Statement of Attendance will be issued to them.

Students are eligible to be a member of HKU SPACE Wine Alumni Association (WAA) after completion of the course. On a regular basis, the executive committee will post the latest updates and promotional materials on the availability of the seminars and events, discounts and offers on the Facebook at ; Email will also be sent for information.

Life Membership Fee is HK$200 to current students and alumni of all HKU SPACE wine/spirits/sake/beer programmes. Majority of WAA events are hosted by leading figures in the wine industry. All events are exclusive to members, and sometimes with their guests.

Online application / enrolment is offered for most open admission courses (course enrolled on first come, first served basis) and selected award-bearing programmes. Application fees and course fees of these programmes/courses can be settled by using "PPS by Internet" (not available via mobile phones), VISA or Mastercard. The bar industry has changed so much in the last 150 years; there was a time in history when it was illegal for women to sit at a bar, let alone work behind the stick. Thanks to the many men and women who have shaped how we drink today, women can enjoy their favourite tipple anywhere and everywhere and excel in a career behind the bar.

We're celebrating International Women's Day, and we'd like to give the spotlight to the female tipple makers in Hong Kong's prosperous cocktail industry. Get to know the women who work hard behind the stick to bring you your favourite drinks.

Victoria is known in Hong Kong as one of the game-changers in the local bar scene. Having been recognized for her pioneering approach to drinking concepts, she became part of Forbes 30 Under 30 Asia. In 2014, she founded The Woods, one of the first bars of its kind in the heart of SoHo. The place offered cocktail tasting menus and drink pairings. Today, the concept has evolved from a brick and mortar cocktail bar to a monthly pop-up concept, catering service, and also extending the services to The Woods Annex, a private tasting library where people can taste over 400 bottles of spirits from Victoria's collection.

"Wines were my first love from a young age when my dad would bring me to Napa Valley while we were living in California," she shares. "My interests grew to include craft beers in college when I lived near a craft brewery. When I came back to Hong Kong, and while I was working at an events agency, I continued to study wines through the WSET program," she adds. Victoria was fascinated by the 'spirits' portion of the WSET syllabus and noticed a lack of artisanal cocktail bars in town, and this drove her to create the beginnings of The Woods.

Natalie always dreamt about working overseas. She then started thinking of the kind of jobs that would allow her to achieve her goal, and she thought bartending might do the trick. "I started in Aqua Spirit in Tsim Tsa Tsui with zero experience, but the bar industry is great. Colleagues in the industry teach you new things every day!" After her first bartending gig, she moved and worked in London for a while. In 2018, she worked as the bar manager of The Old Man HK. "I love that being a bartender makes me feel young," she shares. "Every day, we grow by learning, and we meet different people that inspire you in different ways."

She is continuously inspired by Roman Ghale, one of the founders of The Old Man. "My 'people skills' comes from Roman," she says. "The ways he treats staff and greets guests and friends, the ways he makes a boring story into an interesting one, he never teaches you, he shows you!"
