in order to ensure smooth progression, may i suggest the following as well

1. install 'docker' package
sudo pacman -S docker docker-compose docker-machine

2. DWM and/or LXDE
https://wiki.archlinux.org/index.php/LXDE

3. install 'wmname'
sudo pacman -S wmname

4. add the following line in .xprofile
wmname LG3D

All,
If the question is about Distro, Arch is recommended. If the question is about variant of UI, then it's really upto you. You can get a glance of them from either youtube videos or their specific website.  However, if a lightweight one would do, LXDE, as Saifi suggested would work.

Recommended Laptop state is as follows :

Kernel : 4.9+
Ram : 8/8+GB 
Software with version:
Now, we would also try to get a VM image (.ova) with all these things. However, it's recommended that you try and setup them.

All desktop environment "UI" depends on your need.
Find what you think is more convenient.

Default XFCE looks outdated.

Manjaro XFCE is well polished. XFCE is Manjaro's flagship DesktopEnv.
Ofcourse KDE & GNOME are quite popular.

Customiability: KDE > XFCE >> GNOME
XFCE, KDE is more similar to Windows.
Both have lots of customisation available.

Gnome has UI alligned towards Mac. It offers less customisation as compared to others.

Resource usage
KDE, GNOME, Ubunutu-Unity ~500-700MB
XFCE,LXDE ~150M

There are some other low resource usage DE/ Window manager like i3, awesome, . It uses ~10M
If you are resource constraint, you can give them a try.
