type in a list of options to choose from, however?
When I choose Checkbox, it just turns into a yes or no type of thing,
whereas radio button has the place to type a list.
I need to be able to have a list of 6 things, and the person
submitting the forms needs to be able to choose as many of those 6
items as they wish.

Then you should use 6 checkboxes, one for each item.
