Where do Formhub store the data submitted from the tablets?

I remember I have to install Mongo DB and Postgreslq to setup the Formhub. Does anyone know where and how the SUBMITTED data are stored in Formhub? Does anyone know how I can retrieve the data submitted to the Formhub without using Formhub? I have switched to the new Enketo and now I can't download any old data submitted before the switch.
