We have a new paper published in Food Quality and Preference titled "It’s safe and healthy! Increasing consumers’ willingness to consume aging produce" which I wanted to share with this group! It deals with the consumption of aging produce and shows that by providing safety and health information, consumers are more willing to accept it.
