This book traces
how national and local governments, activists, non-profits,
and businesses have mobilized against food waste over the
past 10 years. From policies mandating food redistribution
to innovations such as selling “ugly” produce
and “upcycling” food by-products, they have
partly addressed the social, economic, and environmental
impacts of food waste. But they have rarely challenged the
overproduction and excess consumption at its root. This book
encourages professionals and citizens to take a deeper bite
out of food waste.

Mourad’s work have been published in English, offering
an in-depth analysis of competition between solutions to mitigate food
waste, the pioneering French
food waste regulation and its Californian offshoot (SB1383), and
food (in)security and waste in the wake of the pandemic.
