Brandi -As always, I am proud of you and your efforts to make the world a better place to live in.
So simple yet hard to get done. However, I would be up to trying. 
Sprouts and Randalls have done that with me a few times. When the Sprout veggie guy was culling out the red & yellow peppers, I asked if he was throwing them away. He said yes and I asked if I could buy them. I bought 12 large red & yellow peppers for 20¢ each. Maybe we could start something at Sprouts.
As for Randalls, They have a managers special area in their meat market  where they mark down items about to expire in a day or so, The mark down lady, as I call her, marks them down 30% in the morning and many are marked down by 50% late in the day. One day, in the morning, they had 16 - Jack Daniel's  pre-cooked Spare Ribs, 16 oz.,  originally priced at around $9.99  on sale at 50% off - or $5.00. I offered to buy all 16 at $2.00 each and the butcher loaded them up in my cart. SO FOLKS- there are possibilities.
