This is a common challenge we face in catering industry esp in case of supplying food to Labour camps.
In this case to serve the food in location at 1 pm you should finish your production before 10 am.
Minimum 1 hr will take for packing
Nd as u have said 1 hr transport.
In this case if u pack ur food in the alum box it will not withstand hot hold temp 60 more than 1 hr.
Secondly its hard to maintain hot holding temp in best quality thermo box max 2 hr from m experience. Plz validate it.
A suggest from m side is portable hot cabinet. If packing required
Nd packing in work site.
Or
Cool it properly, pack in required box nd reheat (location) nd serve. I believe this is pattern follow in flight catering.
