Hot Food Transporting

Dear All,

Need some help.

As we know a good branded Hot Box can hold the optimal temperature for 4 hours.

But what in the case if we want to transport food in Aluminium or Foam box containers packed directly in the vehicle?

Lets say when we are packing food the temperature is about 75+ and we have about 3000+ Aluminium Box containers. Travel time to destination, max 1 hour. So what should be the temperature maintained in the vehicle. Should it be 60+ inside the vehicle?  Or is there some other temperature control as in the case of Hot Box? Is there some kind of vehicle specification for its paneling? Thanks guys.

Dear swaroop
This is a common challenge we face in catering industry esp in case of supplying food to Labour camps.
In this case to serve the food in location at 1 pm you should finish your production before 10 am.
Minimum 1 hr will take for packing
Nd as u have said 1 hr transport.
In this case if u pack ur food in the alum box it will not withstand hot hold temp 60 more than 1 hr.
Secondly its hard to maintain hot holding temp in best quality thermo box max 2 hr from m experience. Plz validate it.

A suggest from m side is portable hot cabinet. If packing required
Nd packing in work site.

Or

Cool it properly, pack in required box nd reheat (location) nd serve. I believe this is pattern follow in flight catering.
