Hi,
Please help me to find out legal reference/international reference to validate the sous vide cooking time and temperature? Any DM requirements are available?

Hello Sarath

Please refer the below link , its one of the detailed guidelines on the internet which I am aware off .

You can as well go through the safety with vacuum packed items to take decision about both pre and post cook handling

DM looks for validation of the hold and come up time  .
