Worms in Chicken: KFC Trivandrum Outlet Closed



Trivandrum, 8 October 2012: The KFC outlet in Trivandrum has been closed down after the Food Safety Inspectors received a complaint from a customer today.

As per reports, live worms were found in KFC chicken which was served in the Trivandrum outlet.Food Safety authorities raided the eatery and food sampleswere collected for further investigation. It is also reported that stale meat as old as five months were seized from the outlet. More details awaited

If the worms are alive, it is likely to be from contaminated salads or packaging material.

Hi Bobby

The last time I was involved with something like this the meat was flyblown and the worms were maggots. This is much more common.

Sharing some background info.....
Alphatobius beetles are normal inhabitants of chicken farms...
Feed has to be withdrawn from the chickens 4-6 hours prior to slaughter to prevent cross contamination in processing plants...
If this aspect is mismanaged the chickens get hungry and start eating worms from these beetles 
These worms are mostly found in the crops of chickens.
In rare instances (if the machines are not maintained properly) the evisceration machines which have to remove the digestive system intact cut off the crops...resulting in spillage of contents onto the carcass...
That's why carcasses are washed with chlorinated water...
Again in rare cases the unwashed worms migrate or get trapped in the folds of chicken skin ( most commonly below the neck skin) and get chilled or frozen...
During precooking thaw or during cooking these worms surface again very rarely....
Finding them alive is another story altogether...but possible...

If worms were found inside the chicken, the other possibilities is that the chicken is undercooked due to improperly thawing.

I saw the video and they are easily able to pull the meat out suggesting that it is cooked.

But, thawing issues leading to undercooking is a damn good possibility.

Well whatever said and done...my question is how far the HACCP n other food safety certification procedures are seriously being followed? or it is just a piece of paper?

During working for a research on HACCP when I was at one of the top international names in their property in Mumbai, they told us they are following international hygiene code and its very strict. We had brunch which was offered as hospitality and I started vomiting the moment we were out of the hotel. I remember I told my student I could feel something wrong with the salad. Their bakery shop was in lobby and to my surprise the display racks had no shutters and we were with our shoes on..now what international hygiene standards say???

HACCP is not a guarantee for 100% food safety...
But a road map to safety (if followed)
There are many who do and there are many others who don't do or partially do it...
But if you see the broader pictures ever since HACCP came in there has been a lot of ground covered on this road to safety...

More incidents are being reported in Kerala shows the attitude towards food safety is changing and general public is taking some initiatives to report to the authorised personnel's.Last week also some other case is reported and was in the media.
 
This is a clear evidence that food safety is getting an importance there and the reporting system has been improved.There are toll free numbers to alert officials of any food safety issues. Even though such facilities are being misused often,but also have some positive impact.
Thanks to FSSAI and food safety commissionerate Kerala, for such measures.
 
Let us support them for their initiatives.

As per CNN IBN report
On a complaint, the Food Safety Authority conducted an inspection and found that the outlet didn't maintain adequate sanitation guidelines. Some seized chicken was allegedly as much as five months old. The outlet has been temporarily shut and other KFC outlets are being inspected.

                    If this is true there is no need to think too much about any kind of failure in any particular step. The basic thing is everyone from the owner to the food handler of the outlet are incompetent, ignorant and careless in food safety point of view. Unless people are trained and stringent actions like prosecuting and ensuring proper punishment is taken this is going to happen again
