Shelf life concerns - Fresh pasteurized milk Vs UHT long life milk

Good afternoon everyone!

Could anyone please help me to get rid of from my headache about the shelf life of milk although you may probably find it as a very silly question :( 

The UHT milk(Long life) has clearly written label 'Refrigerate after opening and consume within 3 days', while the less heat treated/pasteurized fresh milk bottle has storage instruction only 'to be refrigerated and consume within the labelled shelf life' which is mostly 5-7 days? How many days is advisable to keep fresh pasteurized milk after opening? Do we need to follow the same 3 days rule? At home, I do keep fresh milk up to 4 days after opening and it has been perfect to use.  

Many other dairy products do specify in their labelling instructions to reduce shelf life after opening, except fresh milk, so do we need to consider to reduce the shelf life for it into 3 days after opening?

The doubt definitely has some logic. As per My understandings, UHT and sterilized canned products have a long shelf life. By writing in the label that consumes within 3 days , giving an instruction to the cunsumer that the product will not be safe up to the declared expiry date(That may be after 6 months, 3 months ... depends). Like fresh milk the sterilized product also prone to contamination and proliferation of bacteria. After opening the sterilized product the air inside the pack coming contact with the environment.so it is easily get contaminated by the air contact. Pasteurized products the content may not have much bacterial count but the bacterial enzymes inside the milk will spoil the milk within few days(So the spoilage of fresh milk depends on the count of bacteria was there in the raw milk and temperature control throughout all stages ).

In case of sterile long shelf life dairy, same will happen when it comes to contact with the environment. Bacteria enters inside the product and start to produce some chemicals /enzymes and eventually, the product gets spoiled. Both cases temperature control is more important to keep it fresh. Fresh dairy will spoil faster than opened sterile dairy even under temperature control because the bacterial count of raw milk is high, Whereas the sterilization process can denature even the bacterial enzymes which making spoilage.

Hi Tina,

Best before date mentioned on pasteurised milk bottle is applicable when it is unopened; once opened it is best to consume as soon as possible for best taste and quality.

Actually pasteruirsed milk has less shelf  life when compare with UHT milk once opened. 

I hope this makes sense.

It all depends on how the product fared along the supply chain.
For pasteurized milk: If it was always below 5 C, you can use it till the end of shelf life. The Microbiological quality of milk in UAE is really good and at home I take it past expiration date sometimes😁

Well, in your food facility. Stick to the shelf life. If it is staying more than 3 days after opening in a restaurant or hotel, that would be really something rare. Most restaurants finish a bottle in two days max.

For sterilized milk, open and use within 3 days. Always refrigerate after opening.
This is a Food Code requirement.

Dear Tina,

As Mr. Bobby said, consume within 3 days once opened is food code /GSO Standard. Mostly manufacturers deciding this three days for the safe side. 
Once you feel it starts to spoil by organoleptically under good storage and hygiene condition, do not use that. But while we consider broad range of consumer, it is safe to state that to consume within 3 days.
