Salmonella and Egg Products - Another outbreak!

Dear FoodSafers,

 

We had three cases of Salmonella Enteritidis reported from two branches of a popular café.

Investigation by the outbreak response team reveled:

1.       Raw eggs were being used for making mayonnaise. Contaminated mayonnaise was used for making sandwiches ( tuna sandwich and club sandwich) which led to the outbreak

2.       The mixer jars were not cleaned and disinfected effectively after use

3.       The main manager of the café was NOT AWARE that raw eggs were being used

4.       PIC had no idea about recipes used in the kitchen

5.       Chefs kept giving different answers for the recipes

6.       It was extremely difficult to trace the suppliers of eggs- there was hardly any documents readily available

 

We have confirmed three cases – including a pregnant woman and a child

 

Action Points for you:

 

1.       Ensure that all recipes are verified by you. DO NOT USE RAW EGGS IN PRODUCTS THAT ARE NOT COOKED PROPERLY

2.       Have details of the source of eggs – traceable to the country of origin. Audit suppliers – verify temperature control measures too- Verify shelf life of eggs

3.       Disinfect food contact surfaces effectively

4.       Eggs have to be handled carefully- risk of crosscontamination is really high when eggs are handled in RTE prep area. Handle eggs like raw poultry!

5.       TRAIN FOOD HANDLERS AND MANAGERS TO PREVENT OUTBREAKS. Trainers, consultants and auditors- please put emphasis on this. Help the PICs to indentify high risk practices and eliminate/modify them.

It is mandated not to use raw eggs.

Why cant DM make it mandatory to use Pasteurised Shell Eggs (at least for such high risk recipes) when they are available in the local market ?
