BRC Agents and Brokers supply chain mapping

I am undertaking BRC Agents and Brokers scheme for the first time. I am aware of the need to map the supply route to prevent adulteration or substitution, does anyone have any experience of the points at which we should take action?

My client in the UK is supplied with frozen fish from 70-80 sources outside of the country.
