Hello all,
I have a client who wishes to store ready to eat smoked salmon in fish boxes prior to final packaging. The boxes previously held raw fish fillets but will be washed, as below.
He is going to purchase a box washer that works with a caustic solution at 60 centigrade.
He is concerned that the surfaces will not be microbiology clean enough for high risk food, and he doesn’t want to spend a large sum of money before finding out. The manufacturer does not have figures.
Does anyone have experience of such a system that would give an indication of bug counts afterward cleaning?
My alternative is to add in a plastic bag liner but I got the impression he wanted to avoid single use plastics.
