sorry to be the bearer of bad tidings, but you are unlikely to get anything you sow now to be in flower for May
most May flowering things are biennials (honesty, hesperis for example) or are perennials (Geums, nepeta, sage, iris, dicentra ) or are bulbs, (Allium, late Tulips),
I’d only sow sweet peas this month, as there just aren’t good enough light levels for anything else until the 3rd week of feb in a greenhouse, and into March for windowsill growing.
the only exception is if you’ve got grow lamps and heated propagators, - in which case you might get away with Gypsophila covent garden, or cornflowers or calendula.
