Open Office (Version?) over Google Doc / Word ?

To the Community,
We are struggling with PDF rendering issues from Google Doc templates. Issues include fonts, page breaks, headers/footers. From everybody's experience, would we be able to get more reliable results is we used LibreOffice to build our template in? If yes, which version should we use? The shared Google Doc documentation warns users to use the same version, quote:
"Please note that we are currently using LibreOffice 5.4.5.1 to generate PDF documents. Please use the same version of LibreOffice to generate your templates to avoid any nasty surprises!"

In the generated PDFs LibreOffice 6.2 is recorded as the renderer. The latest available version is LibreOffice 7.5.3 .
We appreciate your guidance.
