You might try checking in Orange County since that is where Apopka is located.  It is about 20 miles south of Eustis.  I am not aware of cemeteries except for Sorrento on 437 in Lake Co.  and I am sure there would be ones in Zellwood and Plymouth in Orange. They are closer to Apopka. 
 
Orange County Florida Genealogy Project   There are not very many cemeteries that have been surveyed as yet in Orange.  I checked a few and didn't see her listed.  When you are looking remember to check all the names as some are barely recognizable as the name you are looking for.  That is why Soundex is such a good tool.  The ones I looked at were pretty small so checking each name won't take much time.
 
Florida did not require sending death certificates to the state until around 1908.  If you can get a death certificate, you might find her.  Do you  suppose she could have remarried.  If she was the person on record when Middleton died, you might get somewhere.  Also check the newspaper in Apopka- the library might have them on microfilm.
