Saving pixelvalues with gstreamer

I am using a Lepton 3.5 on a purethermal mini pro board with a raspberry pi 4. I installed the firmware and i get a live stream with gstreamer or guvcview as described in purethermal1-uvc-capture.

Now i want to save the data from the picture, the pixel values / temperature, every second in a file. I am trying it with gstreamer but couldn't find a proper solution yet. 

If possible, it wuld be nice to save the corresponding picture with a temperature scale.
