Hello.

Don't you think that DBeaver should offer the latest version of Jaybird driver?

When I setup the connection, by default DBeaver takes Jaybird 4.0.0

I'm not sure how DBeaver decides on its initial driver version after
installation, but you can update it in Database > Driver Manager >
Firebird > Edit > Libraries, select the org.firebirdsql.jdbc:jaybird
driver, click Download/Update, and click on the version to select a
different version.

I suggest reporting a bug with them at
https://github.com/dbeaver/dbeaver/issues
