Elderflower whine

It's not really a whine, that's just an awful pun and some recognition
of the fact that I felt like a criminal with my bag of elderflower
heads and a pair of scissors, leaning over people's fences and
foraging in Victoria Park.

What do you recommend I do with them? I got about 20 heads / 2l of
elderflowers and I want to make something tasty. Elderflower cordial
seems a bit boring (no fermentation!) and wine takes too long.

Any recipes?

They're steeping in warm water for next couple of days but after that
who knows.

My housemate and I were talking about this just this afternoon because
we've got an elder tree in the back garden... She said elderflower
champagne was best (though, like you say, it does take a while). We
located a decent looking recipe here:

It seems that swing top glass bottles are maybe the one, but just
about everything carries an explosion risk (see comments in link
above!) We've got a 1l glass swing top in the kitchen but will be on
the lookout for some more. We're thinking of maybe using some old
Grolsch bottles if we can find them.

I guess you could use the flowers to make a kind of syrup to add to
puddings or compotes?

so we went picking elderflowers a few days ago and out housemate Claudia left us with this recipe for elderflower champagne:

"dissolve 2 kgs of sugar in 10 lts of hot water
mix with 2 pints if flowers, juice of 5 lemons and 1 sliced lemon
drink whenever you like
should start bubbling after 2/3 days
is fine to drink until it goes off"

shes done it like this every year since i've known her (2!) and she just keeps it in a jug in the fridge cause we quaff it all. we've never bottled any so i don't know bout splosions
