Based in London, Hoxton Farms is cultivating a revolution. They combine cell biology and mathematical modelling to make a better kind of fat. Starting from a few cells, they grow them and "help them" produce animal fat in bioreactors. And the end product is a delicious, animal-free and sustainable ingredient that can be added to plant-based and cultivated meat products, to enhance their flavour profile!
