Is there a simple way to make Fancybox's width a percentage of the
viewable screen? It doesn't accept percentage as an argument.

as far as I know this version doesn't support percentages;
width has to be fixed to px

Is this still the case? I only ask because the post is from 2009 so curious if something has changed since then that allows percentages.

since version 1.3.x percentages are supported for iframe, swf or
inline type so these are valid options:
'width': '95%',
'height': '90%'
