Thank you for this delicious recipe. Having just come back from Oahu and Kauai a couple of weeks ago, and enjoying the loco moco over there, I went on a search and found your version. So tasty! My husband and I have just had a wonderful lunch!

Loco Moco itself, like most Hawaiian cuisine, is a fusion dish (recipe for an original Loco Moco here). In this recipe I wanted to take it a few steps further. This dish is inspired not only by the obvious Thai red curry and loco moco, but also by Japanese kare. Kare is a Japanese sauce which toes the line between curry and gravy. It is savory and thickened like a gravy, but the backbone of curry powder creates a unique and wonderful dish. It is a perfect cool-weather meal and is one of my absolute favorite easy dinners on the road. You can buy cubes of the stuff and all you have to do to produce a fantastic meal is toss them in a pot with some meat, vegetables and water for a few minutes.

Loco moco is one of Hawaii's most popular dishes. I never really thought much of loco moco until I tried an authentic Hawaiian restaurant that served the most amazing version. The dish is made of a beef patty topped with savory gravy and a fried egg on a bed of rice. The secret behind an amazing loco moco is all about the gravy. Here is my version with sauteed mushrooms and caramelized onions for a fancy version of the classic meal. A comfort breakfast dish at its best!

Hawaiian cuisine is a fusion of Chinese, Filipino, Korean, American, Japanese, Polynesian, and even Portuguese foods. Visit a Hawaiian restaurant and see Korean kalbi, Japanese tonkatsu, and American macaroni salad. Loco moco is a fusion of American and Asian cuisines, serving a hamburger patty with brown gravy and a fried egg on white rice. Although the traditional version includes a beef patty, there are many other variations that have spam, bacon, ham, teriyaki meats, and seafood. I stuck with the original version for my recipe, adding a couple of elements to glam it up.

Cook a sunny-side-up egg and serve the dish while hot. Pierce through the runny yolk to add creaminess to the dish and dig right in! Loco moco is great for breakfast, lunch, or dinner (or even as a late-night snack). Have one bite and you'll be yearning for more!

A loco moco with curry sounds really good! Thanks for sharing your curry recipe -- I'll have to give it a try. I'm always tempted to buy the Japanese curry bricks (like S&W Golden) at the store but then I look at the nutritional info and the ingredients, which usually lists something like beef fat first, and then I chicken out.

I substitute ground turkey breast for ground beef a lot and find it delicious.

This is one of my favorite posts of yours!! I've never had loco moco either but of course have seen it on many menus in Hawaii. Your version looks great. Incidentally, that's how I learned to cook rice too--the 1/4" thing. BUt now I use a rice cooker, why wouldn't I?!

P.S. my favorite part about this Hawaiian loco moco is the gravy. OH.MY.GOD. the gravy is to die for! If I could, I would bathe in it. I recommend making a double batch because you will want slurp it all up! This gravy would also be great with my basic Asian meatballs.

With your burger meat ground and your gravy made you can begin assembling your loco moco. Put on a pot of rice. I prefer Japanese sticky rice for the recipe. While the rice cooks, generously salt and pepper your burger patties and toss them into a hot skillet.

My favorite meat with the loco moco is by far fried spam, however I can understand wanting the quick pan sauce from the beef renderings rather than additional gravy or an interesting take on pan spam gravy.

Brian and I were married on Maui in 2011 so Hawaii has a very special place in my heart. And one of my all-time favorite Hawaiian dishes is the Loco Moco!! If you have not tried a loco moco before, then just wait until you see what this recipe is all about: sticky rice topped with a hamburger patty and an over-easy egg and then smothered in delicious dark brown onion gravy.

What is loco moco? In case you are unfamiliar with this dish, it is a hamburger patty on top of a mountain of rice, topped with a fried egg (or two) and gravy. According to some websites, loco moco was invented on the Big Island in the 1940s. Teenagers at a local Japanese-owned diner wanted a dish that was super cheap and super filling. Thus, loco moco was born!

You have now generated a predictive solution, 'predictSolution.sto', and a tracking solution, 'trackingSolution.sto'. Use mocoPlotTrajectory() to compare the two solutions; they should match closely:
