Yes. You can change that by setting FROMADDR in FaxDispatch or
FaxNotify. See:

HylaFAX is very versatile, and as such it gets used and installed in
many various ways. I'm glad that you found a guide that was useful for
you. I don't have any recommendations on how to introduce yourself to
Linux and bash scripting, but as far as HylaFAX is concerned my
documentation recommendations are always the man pages and the HOWTO:
