How can I limit or define a range of data points in the input table or
spreadsheet to be included or excluded in the function search without
deleting them (similar to the expression fit [x=5:*] f(x) in the
gnuplot fit function)?

In the Prepare Data tab, there is a option to filter the data.
To filter on x:
1) select the x variable
2) check the filter data of (x)
3) enter an expression like x >= 5
