Some efforts exist here:

Is there an existing realtime Etherpad client that doesn't run in a browser? For example, connecting an EPL backend to a native text widget in some non-web graphical toolkit (winforms, QT, Gtk, etc), or to an existing word processor?

I assume that this would largely be a program that listens for keystrokes, and information coming in over a websocket connection to the backend, and hooking up the events to the GUI text widget.

I'd appreciate pointers to any existing projects; thanks!

Thank you, that's exactly the kind of project I'm looking for! (One would think that there would be more of these kinds of clients...)

They are complicated to write so people tend not to get started.  You can run Etherpad in Chromeless so it feels like a desktop application.
